Full Cupping Notes

This isn't a "fruity" dry process coffee, and instead offers bittersweet and boomy flavors, sweetly accented roast tones, and herbal hints. The ground coffee had a molasses note to the sweetness that gives way to muted dried fruits, while the wet aroma showed smokey caramelized aspects in both City+ and Full City roasts, dark cocoa, with a savory saffron note. Roast toned flavors marked the cup, with cocoa intensity at all roast levels we tried. Light roasts brought out subtle fruit notes, dried berry, bringing soft brightness to the flavors. The profile at City+/Full City felt well rounded, the dark chocolate flavors grounding the cup, with accents of burnt sugar, dried tarragon, and brown spices in the aroma. The finish is long, unfurling to bittering cocoa and a hint of red chili that together reads like spiced mole. This is a very versatile Zambian coffee with favorable flavors across a wide roast range, and lower acidity and body that come with deeper roast development make it an excellent candidate for espresso.
