Valley View Ranch Coffee is a small-batch specialty coffee roaster on our ranch in Prather, California, in the Sierra foothills about 30 minutes from Fresno and Clovis. Our beans come from coffee-growing regions around the world, and every batch begins here in the foothills.

We roast in small batches in Prather. Working in small lots lets us develop each coffee carefully and keep the character that makes each lot unique. Our coffee is available online for customers in Fresno, Clovis, California's Central Valley and the rest of California.
Green coffee that scores 85+ on the SCA scale
Great coffee starts with great green coffee. We buy specialty coffees that score 85 points or higher on the traditional SCA 100-point cupping scale, chosen for distinctive flavor, aroma and overall quality. We source our green coffee from specialty importers that work directly with independent farms and producers, so we know where each lot comes from.
An 85+ score is a starting point, not the finish line. Coffee professionals look at aroma, flavor, acidity, body, balance, aftertaste, sweetness and overall cup quality. Today the Specialty Coffee Association's Coffee Value Assessment looks at an even broader picture, including physical attributes, origin and processing. We look for coffees that offer something distinctive in the cup: bright berry and floral notes, rich chocolate and nut, deep caramel sweetness, or something unexpected.
We roast for the coffee, not just the roast level
We build each roast profile around the coffee itself, looking for the point where sweetness, body, acidity and origin character come together. Some coffees shine when their fruit and floral notes are preserved. Others open up into chocolate, caramel, nutty or bittersweet flavors with more development. Our goal isn't a light, medium or dark label. It's the roast that brings out that particular coffee's character.
Our coffee is roasted and shipped as orders come in, so it's fresh.
Every coffee we sell is whole bean, because whole beans hold their flavor longest.

Berries & Floral: fruit-forward, aromatic coffees with berry, floral and bright fruit character.
Nutty & Caramel Sugars: sweet, balanced coffees with caramel, honey, nuts and chocolate.
Chocolate & Nuts: richer coffees with cocoa, nutty and caramelized character.
Dark Roast: bold coffees with deeper caramelized, bittersweet and roasted flavors.
Reserve Line: limited coffees picked for unusual processing, origin or flavor.
