Full Cupping Notes
This coffee offers aromatic sweetness, with bright accents of fruit and tea that draw out mouth cleansing acidic impression. Honeyed sweetness comes through the ground coffee, like honey cake, sweet baked goods accented by notes of brown sugar, and raisin. The wet aroma has a dark sweetness, maple syrup, brown sugar cooked with butter, and a note of red honey on the break. I was impressed by the level of sweetness in my City roast. It comes off tasting well-developed for a light roast, with profiles of brown sugar, caramel and cinnamon sugar that push through to a very refined, sweet finish. Later I get some caramelized notes, like the smoky-sweet side of burnt toffee. Tart aspects dial up acidity, highlighted by a note of green apple, with brisk tea-like flavors, rose hips, and a hint of English Breakfast in the aroma. It's been a great pour-over coffee, though I think full immersion brew methods like French Press will highlight this coffees sweet side, and body.
